There are 60 distilleries, tasting rooms, and spirit producers in Brazil on the Distillery Map. Cachaça is not rum, and the distinction is legal as much as practical: it's distilled from fresh-pressed cane juice rather than molasses, and bottled between 38 and 48 per cent. The United States only agreed to recognise it as a distinctly Brazilian product in 2013. The wood is the more interesting part — producers mature in native timbers like amburana, jequitibá and bálsamo, which no other spirit category does at any scale. Most of what's listed are small alambique operations rather than the industrial columns behind the mass-market brands.
