Dunedin takes its name from the Gaelic for Edinburgh, and the Scottish settlers who founded it brought distilling south with them. That thread broke in 1997 when the country's only whisky distillery closed; the remaining casks were sold off and bottled by other people years later. Whisky here effectively restarted from nothing in the 2000s. Gin carries the volume now, usually built on native botanicals — horopito, kawakawa, manuka — rather than juniper alone. There is no large domestic producer, so the list below is small operations throughout.
